GREENBURGH, N.Y. — The Keebler Elves bake cookies. The Pillsbury Doughboy bakes cookies. And at least once a month, three local firefighters swap helmets and turnout gear for hair nets and aprons and, you guessed it, bake cookies. Lots of them.
What started out as a firehouse experiment in "healthy cookie" making has morphed into a growing side business for White Plains Firefighters Sunny Seward, Tonin Bucaj and Dominick Lombardo with the Fairview Fire Department in Greenburgh.
The three co-founded "Cookie Republic," along with Bucaj's brother, Mark, in 2013 and now sell several varieties of gluten-free, organic cookies in a number of Lower Hudson Valley stores, across the country and even at a few gyms in Switzerland. They donate 10 percent of their profits to the National Fallen Firefighters Foundation.
